Why White Wine?

Q. Appearance being related to truth, why do we use white wine for consecration to Christ’s precious Blood?

P.G., via e-mail

A. Here is a reply from Father Francis Hoffman, J.C.D.:

I think you have it backward. Appearance is not always related to truth, and we have recently witnessed some notable exceptions. Nothing about the holy Eucharist appears to be what it really is: the consecrated Host does not look like flesh, and the consecrated contents of the chalice do not taste like blood.
